It does for me. Although I love both cooking and baking, I think baking brings me the most joy. It makes me happy not only because I love food but because I find joy in being in my kitchen by myself creating something that other people will enjoy. And who doesn’t appreciate a freshly baked treat once in a while.
If you like to bake, you may want to try this super easy recipe for Lemon Blueberry cake. It’s the perfect thing to share with co-workers during a morning meeting or to take some over to a neighbor or friend who is having a difficult week.
Lemon Blueberry Cake
1 teaspoon baking powder
½ cup butter
½ teaspoon baking soda
4 ounces cream cheese
½ teaspoon salt
2 teaspoons vanilla
8 ounces lemon yogurt
½ cup powdered sugar
3 cups flour
4 teaspoons lemon juice
2-1/2 cups blueberries
Lemon zest (optional)
Beat first 4 ingredients together with electric mixer until creamy (about 5 minutes). Add eggs one at a time, beating after each one. In separate bowl, lightly toss ¼ cup of flour with blueberries. Combine remaining flour, baking powder, soda, and salt. Add flour mixture to sugar mixture, alternating with yogurt. Gently fold in blueberries.
Pour batter into 10” tube pan that has been coated with cooking spray. Bake at 350 degrees for about 1 hour and 10 minutes. Cool cake for 10 minutes and remove from pan.
Combine powdered sugar, lemon juice, and zest (if using) together until smooth and drizzle over warm cake.
